La Otilia is a bakery that opened in Mexico City in January 2016 and holds the distinction of being the first and only gluten-free and refined sugar-free establishment in the entire country. This atypical bakery is a member of Restaurants for Health, affiliated with the Mexican Association Against Diabetes, which speaks much to its interest in promoting healthy and conscious eating.
Founded by Mariana Quiroga, La Otilia was born out of personal experience. Mariana was diagnosed with gluten intolerance at the age of 25. After this, she imagined a space wherein individuals with similar dietary needs could satisfy their bodies without compromising taste and safety. The name is in honor of her grandmother, Otilia, who suffered from the yet undetectable celiac disease in Mexico. Her love and commitment to this bakery resonate because it is an impulse to serve the community.
